I took this paté and a sliced cucumber to a football-watching gathering. Made for a different game food/dip for sure. Enjoyed by the adventurous.

Day 4


Breakfast: 2 homemade pastured pork sausage patties, muscadines, orange, cup of green tea

Lunch: 8 oz bone broth, beef heart with onions and blueberries, dandelion greens with olive oil and lime juice

Leftover beef kidney with some beet greens thrown in. Dandelion greens with avocado oil. Muscadines. Cup of green tea.

Lunch: Acorn squash soup with avocado and kale & onions.

Supper: Stir fry beef with celery, carrots, bok choy.

A couple of bananas today.

Muscadines. Nectarine.

Beef Kidney & Onions

For lunch Thursday, I introduced offal, in this case beef kidney, highly recommended for it’s nutritional profile. I had never made it before. It smelled offal (actually pronounced “awful”). After I finished preparing it, I wasn’t sure I would be able to get beyond the smell and sample it. I waited a few minutes and took a first tentative bite. It was very good, so I dove in and consumed the rest.
