A blackjack term may have popped up as a subject line for this post, but the candied carrots recipe from Dianne Sanfillipo’s book Practical Paleo is no gamble–this veggie dish is beyond wow. Having multi-colored carrots on hand when the root crops came out at lunch prep time yesterday enhanced the visual appeal and the nutritional profile of this easy-to-make, four-ingredient (8 carrots, 4 dates, coconut oil, sea salt) delight.
I know my meal pictures are not photographic gems because I am taking them with my phone under a cabinet tasklight CFL, but the meals we have been eating since I started the AIP three weeks ago are definitely gustatory gems. Today’s lunch was another satisfying, healing and mouth-watering delight, prepared by my generous spouse who is super supportive and accompanying me along my healing journey.
We are in a pattern of him preparing the weekend meals. I love this pattern!… Today he prepared grilled pastured lamb chops served with a pesto oil, mushrooms sauteed in virgin palm oil (rich in carotenes and vitamin E), and mixed green salad with pesto oil drizzled over that too.
