Pot Roast — Thinking of My Mother

I had thoughts of my mother and fond memories of many Sunday noon meals growing up as I prepared and ate pot roast today. One difference with mine today was using parsnips instead of potatoes (a nightshade–not allowed on the AIP). I remember when my siblings and I would ask for additional servings of meat during those Sunday dinners, Mom would always tell us to get some additional vegetables too.

I like having some leftovers with this dish.
